What kind of coat does my rabbit have?

As far as I'm amware he's a full lion head male with the single mane gene. The picture with the lip beside him is the father
And the single hunny picture is his son.

what colour would you call there coat?

I'm gonna say that their color of coats are Harlequin. It is possible there was a harlequin breed that was bred in the rabbits line and resulting in your rabbits's colors.

He doesn't look like a full lionhead, especially if his father is a lop?. Neither of the rabbits with manes look like pure lionheads.

Very unlikely that there is any of the breed Harlequin in them; that is a rare breed, and the color is much more common in small breeds such as mini rex and lops.

The two with manes are "harlequin" or "japanese" colored, the lop is "torted otter", also called by ARBA standards "fox" or by BRC standards "sooty on tan"
 
Beans the dad had a complete half and half face colouring with both paws being different too

He appears to be a Lion Lop (a mix between a lion head and Holland Lop). The multicolored one has a coat coloring known to be "Japanese harlequin" (orange/black). The brown one has a coat coloring known to be "black torted otter" (simplified as "fox"). Hope this helps, and happy holidays!
