what are your favorite healthy meals and snacks?

My favourite meal is called raw fish here, not sure what you'd call it elsewhere. I learnt this of a Samoan family.

It's basically you take any amount of the following ingrediants that you like or have and let them sit overnight.

A pile of chunkely chopped fish, any firm white meat fish will do, preferably with a mild flavour and scent
Lemon juice
Coconut milk (or cream if you aren't on a diet)
Chopped spring onion
Chopped tomato
Capsicum (bell peppers in come countries), red green and yellow
Small amount of diced carrot

Throw it all in a large bowl, let sit over night or at least a few hours. The lemon juice marinates and sort of half cooks the fish.

It sounds weird, but oh my goodness it's like heaven to eat :shock:.

 
Here's something I made the other day, and must admit I really like it. My food options tend to be quite limited, as I have to stick pretty closely to a Candida-control diet, and I'm vegetarian to boot (though I do still eat eggs and fish), so finding recipes I can make can be a bit challenging. But I like this one...it's very simple to make, and very fast (you do need a blender):

Avocado and Tomato Soup

4 large tomatoes
1 medium avocado
2 green onions
1/4 tsp. ground dill seed (I used dill, rather than dill seed)
dash cayenne
1 cup chicken broth (to sub, I used veggie broth)
1 tsp. kelp (didn't have this, so I just omitted it)
salt to taste
1 cup fresh parsley, minced
1 cup celery, finely diced
1 tomato, finely chopped

Put all ingredients except for the last 3 into a blender at low speed. Once blended, put in a pot, along with last 3 ingredients, and warm on stove over low heat. May also be served cold, if desired. Serves 3 to 4.

I also didn't have celery on hand, so I didn't add that to the recipe. However, I did happen to have some leftover cooked brown rice, so I threw some into the mix, and the soup turned out really delicious. :)
