Thanks for the recipes, Ladies! Idon't think you can ever go wrong with Chicken Marsala. It'sanother one of those, have-it-ready-in-30-minutes meals

Chicken Marsala

Chicken Breasts
Onion - cut thinly
Garlic
Mushrooms - optional
Marsala wine - 1/4 cup
White wine - 1/4 cup
Flour, salt & pepper, garlic powder and olive oil



Wash and dry chicken, smash them thin with mallet. Dredgethem in flower/salt & pepper/garlic powder mixture and saute inolive oil. Put each piece aside on serving platter.Then add white wine to clean pan and stir - pour overchicken. In same pan, add more olive oil, and saute garlic,onion, and mushrooms until soft. Add Marsala wine, cook 2minutes, then pour mixture onto chicken and serveimmediately. (I usually serve it withrice.)

I make parmesan chicken in the oven. I mix one partBisquick with two parts grated Parmesan, add garlic salt, pepper andpaprika (I like a lot of paprika). I dip chicken pieces inegg/milk mixture then dip in the cheese mixture and lay inpan. Then I drizzle with melted butter or margarine and cookat 350 for about 30 minutes. I serve with linguine and tomatosauce.

How about aYummy Veggi bake , I haveposted this in another thread aboutexcess Zuccini but itwill work in this thread also

I use one of the disposable alluminum baking pans for this .

1 zuccini

1summer squash

1 large tomatoe

1one onion

1 pepper

4 or 5 cloves garlic ( whole )

jalapinos ( to taste or if your daring Habanarios )

1 or 2 small potatoes cut in chunks

salt pepper and any other seasoning you like

I use fresh form the garden tomatoes for the broth.

cut all veggies into chunks of equal sizes so t hey all cook evenly.

cover tightly and set on thecooler side of the grill andslow cook it till all vegies are tender ,

you can also cook this in a 350 degree oven the same way .

oh i almost forgotthe fresh french or Italianbread for sopping up the broth .



 
I have to tossthis in for those "not so intense" cooks! :p Perfect forthese still cool spring evenings. This is awesome stuff and don't tossout the idea of trying it just because it's so simple...Everybody whotries it likes it! My 74 year old mother-in-law ask for the recipe lastfall and I never gave it to her because I didn't want her to know itstarted from abox mix!:shock:

Nacho Potato Soup

1 package/box (5.25 oz) Augratin potatoes

1 cancorn-drained

1 can rotel- don't drain

2 cups water

2 cups milk

2 cups cubed velveeta

crunch up the dehydrated potatoes whilestill in the bag. Mix everything together except the velveeta and bringto a boil. Stir often, it will scorch. Lower heat and simmer for 30minutes. Add velveeta and simmer until the velveeta is melted and thepotatoes are tender.

I double the recipe for my family.

I love this Taco Soup recipe that a friend gave me. It makes a fair amount for a crowd and it's SOOOOO easy!

You'll need:
1 pound ground beef
2 cans chopped tomatoes
1 cans corn
1 can hominy
1 can ranch style pinto beans
1 can black beans
1 onion
1 package taco seasoning

Basically, brown the beef with as much of the chopped onion as suitsyour taste. I also add garlic at this point because I LOVE it. Thendump all of the cans into a large stew pot, add the meat and simmer.

I usually drain a little juice out of the cans, but I like a thicker,more chili like soup. I also spice to taste instead of using tacoseasoning, but the seasoning packet works great, especailly if you wantto just be able to dump stuff in and go. You can also make a vegetarianversion by adding more beans instead of meat. I usually mix in whitebeans or kidney beans to sort of spice up the color mix. :)

Serve with tortilla chips, top with cheese or sour cream and salsa!!It's hearty, it feeds a crowd, and it takes about 5 minutes of preptime.
 
OH! We love that Taco soup! It's one of ourfamily favorites! You guys gotta try it! We have a bit of avariation to ours. We add a package of ranch dressing mix, a can ofgreen chili's and one of those cans of chopped tomatoes is a can ofRotel instead!

It's goodstuff!

Cool! Thanks for the ideas!! I'm always looking for new ones...I'll add one I just learned of that is pretty easy....

Chicken Enchilada Casserole

3 boneless/skinless chicken breasts (boil and shred)

1 8oz thing of sour cream

1 jar (medium in size) salsa (choose if you want mild/med/hot)

1 can cream of chicken soup

1 can green chilis

taco seasoning (to taste)

Flour Tortillas

Cheese

Put the sour cream, salsa, chicken soup, green chilis and taco seasoning in a bowl and mix.

Layer the tortillas, chicken, mixture of goup above and cheese in a9x13 cake pan. Should make about 3 layers and I like to topit with a layer of tortillas.

Cook for an hour at 350! Top with more salsa, sour cream, whatever you like to serve!

Keep practicing! Hope the next one turns out better. My first one was tough as leather LOL

My kids are outstanding cooks -- I'll never be able to looseweight. Ryan makes a chocolate chip cookie to die for andStephanie is certainly no slouch in the kitchen either :)

Anyone have any good homemade Mac and Cheeserecipes? I've never made a *really* good one homemade, but love it.Need a good recipe.

I'm really craving it right now...
