Nothing to do with rabbit recipes so cancel thetroll hunt. Just wondered if anyone has any nice dinnerrecipes that they could share with me as I fancy a go at cookingtonight.

Well, well, well! :D I have fond memories of another recipe thread that is long since buried.

What are you in the mood for? Chicken, beef.....I love to cook, as doesCarolyn, so I'm sure she'll be interested too. She and I used to sharerecipes and give each other ideas. (Remember our beef stew Carolyn?)

just not too complicated as i am not a very goodcook. so far i have mastered: tuna potato bake, autumn vegetable soupand a 50% chance of not messing up a cotswold potato and parsnip bake.

I make an oven version of parmesan chicken that is YUM YUM!!!

I can give you the recipe if you like.

Laura

PS: I'm relieved this wasn't for rabbit recipes! Myhusband thinks it's funny to send me rabbit recipes fromEpicurious. He's always on that site.

It is, I just had the other night. It is helpful to have someone there, as there are several steps (at least the one I do)

First, clean and tenderize chicken breasts. To tenderize, you'll needone of those cooking "hammers". You don't really need to do this step, but I like it this way.

Have ready in three separate bowls: flour, beaten eggs (usually two ifyou have four or more chicken breasts), and bread crumbs mixed withgrated Parm. cheese. Dip prepared chicken in flour first, then egg, then bread crumbs, coating evenly.

Fry in a frying pan until golden. Place on cookie sheet lined with tinfoil (makes for easier clean up). Top chicken with a generous amount ofspaghetti sauce, then layer with mozzarella cheese. Bake for 30 min. at350F (175C)

I usually serve with some pasta and garlic bread.

hmmm, well here is the tricky part.

I hate the site of blood on meat.

I hate that when u are cutting chicken it gets under your nails.

I would love to know how to do some sort of stew/hot pot that does not involve lamb or tomatos....

As u can see i am a very fussy person :?

I'm glad ppl have replied though i though i may be shot dead on thespot for going O/T lol - thanks everyone that has replied so far xx

Blackjack,

Do you mind eating meat? Or is it just the preparation thatbothers you? You can buy the chicken tenders that are alreadycut up. I use those sometimes. I hate handlingchicken too. I always clean like crazy afterward.

Also, you can wear gloves while handling themeat. I too hate getting it under my fingernails, but I love to cook sojust put up with it. Besides, when I was younger I worked in a gourmetdeli and I kind of had to handle all sorts of stuff.

For super easy, you can do steak and baked potatoes, with bread andsalad. If I don't have marinade, I just salt and pepper the steak, witha sprinkling of garlic powder. Let it sit for at least an hour, severalhours if you can.

Baking potatoes is super easy. Pierce with a fork in several places, wrap tightly in tin foil, bake for one hour at a 450F (230C) oven.

For the steak, you can either broil it in the oven or grill it.

Carolyn, I never tried stew with Jalapenos, although I do love hot andspicy foods. I actually made beef stew recently, as I had the beef inthe freezer and wanted to make it before it got to hot out for stufflike stews. I put a liberal amount of thyme in, boy was it tasty.
