My rabbit, Guppi is a 2.5-year-old neutered male dwarf lionhead, and I want to get him a friend. The one that I picked out is an 8-week-old netherlands dwarf female, but I'm worried about the age gap and their different energy levels. (Guppi is rather laid back.) I talked with the breeder, and she said that neither should be an issue (I could even keep them together until the girl reaches maturity, then get her spayed, wait a month or two, and re-introduce them).

What do you think? Should I try bonding them?

((I'm also worried about Guppi's safety. Maybe I should get him a bunny that I can get spayed sooner to lower the risk of a conflict.))

If it were me, I would go with what the breeder said and not worry too much. I prefer to have my young ones grow into things, learn social skills and so. I never had any buck that behaved bad against kits, and since he's neutered he wont pester her. There might be turbulent times ahead when she hits puberty, but I wouldn't that consider a safety risk, a doe demanding something a neutered buck doesn't care about isn't something violent, just mildly annoying . It might help if you make their space so that there are comfortable places where they can get out of sight of each other when they feel like it.

I got my intact buck that was my free range house bunny a cuddlebun (link to thread), had a young one neutered and put them together, little problems, just related to the buck being intact. Now his successor lives with her, got him neutered last year and life got way easier (intact bucks habits when there is a doe around don't align well with living indoors), so I would think you'll be fine.

You would be much better off adopting an already spayed bunny from a rescue centre.
