I realize that Easter is over now, but we actually just finished eating dinner a few minutes ago (ate at around 11:30 pm, we just weren't hungry until late). This year and last year I've made Welsh Rabbit for dinner, just because I think it's funny. It's toast with a cheddar cheese sauce on top. Very easy to make and tastes delicious, especially since I used the bread I baked this afternoon for the toast! If we'd been hungrier, I would have made hard boiled eggs and carrots with honey glaze to go with it as they both seem to be Easter appropriate sides.
Rory got an extra big piece of carrot in honor of being the Easter bunny, and Tallulah got the teeniest, tiniest little piece of carrot in honor of being the helper bunny... She's 4 1/2 months old so not supposed to have veggies yet, but it was the size of a pencil eraser so I don't think it will hurt her. The "Easter rats" and "Easter hamster" also got some carrot.
What did you guys all do for Easter? We aren't religious, so Easter is all about the Easter bunny and the beginning of spring for us
My mom sent Paul and I a box of Easter candy, chocolate bunnies and some little presents. I kind of wish we lived closer to his brother so we could do an Easter egg hunt with his nephews! Kids are so much fun at holidays like this.
