We are about to bring Lola home and I had a question about switching her food. She is currently eating Ecotrition and I want to switch her over to either Oxbow or Sherwood Forrest (probably SF), but her current bag is almost out. I know we are supposed to switch slowly, but that would mean buying an ENTIRE BAG of Ecotrition. How bad would it be to switch her over relatively quickly?

Pellets are much less important then hay.
Just reduct the amount of the new pellet to avoid digestive upset

Since you will need to switch over quicker than normal just slowly increase the new pellets and give her more hay to eat until she's back at normal ration.

I recently switched to Sherwood Forest's formulation with extra high quantities of hay (previous food was a mix of Oxbow Bunny Basic T & Natural Science). The Sherwood food seems to be very easily digested and the very high hay quantity likely makes a more rapid transfer easier. So I would not worry too much...worst case, you see signs of gastric distress, reduce pellets, increase hay, and if need be revert to what you are using before. However, if you read the reviews on Sherwood Forest, it seems the food almost always improves gut function and stories about it causing gastric distress when switching over are all but nonexistant.
