It's the holiday season, and that means cookies, and candy, and sweets galore! The problem witht that is that my mom can't eat sugar. It makes her sick.

A while ago we discovered stevia it's a from of sweetener taken form the Stevia plant. The great thing about this is that, it's health.

So I figuered I'd start a Thread where you could post recpies with NO sugar in them!

Since I LOVE to cook, I might find some new recipes that we could all eat!

That's a nice idea for your mom, TK. :) I try not to eat any kind of sugar as much as possible (I'm not supposed to have any, as it makes me very sick too...Candida), but I find that for the most part I wind up just avoiding cakes and candies, etc. (except for the very odd occasion when temptation is just too much to resist!) instead of substituting. I do use stevia in my coffee and in my morning cereal blend; found it took a tiny bit of getting used to the taste, but boy, is it ever concentrated!

I have a couple of candida control cookbooks around here somewhere...when I get a chance I'll take a look at them and see if there are any dessert suggestions in them. If I find any that sound good I'll post them for you.

Oh here's a great recipe I changed to make chocolate moose pie! It's really good!

Stuff You'll need:

  • double boiler
  • whisk
  • spoon
  • tablespoon
  • teaspoon
  • 2/3 cup
  • 1 cup
  • 1/3 cup
  • pie dish
Ingredients:

  • 3 tablespoons unsweetened cocoa
  • 1/3 cup flour
  • 30 drops of liquid stevia (or 1 cup sugar)
  • 3 egg yolks
  • 1 cup water, divided
  • 2/3 cup milk
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla
  • Baked pie crust or purchased cromb crust, 9-inch
Preparation:

Mix cocoa and flour in top of a double boiler over hot water and whisk in about half of the 1 cup of water, just enough to make a smooth paste. Blend in the steiva and the beaten egg yolks and add remaining water and milk.

Cook over low until the mixture is thick; add butter and vanilla. Pour into baked piecrust. Chill thoroughly.

Note: I really like it toped with mint leaves from our garden. It's also good with rassberries, and I bet strawberries too!

This one's for the Pie crustI use with it:

Pie Crust:

  • 1 1/3 cup flour
  • 1/2 cup shortening
  • 1/2 teaspoon salt
  • 3 tablespoons ice water (I use around 4-5 tablespoons)
Mix flour and salt in a mixing bowl. Cut shortening into the flour with a pastry cutter (or something or utensal) until mixture resembles the texture of tiny split peas. Do not use your hands to try and mix it, the heat from your hands will mealt the shortening, causing the pastry to be heavy, not light and flaky.

Once mixture is the right texture, add the ice water and combine with a fork. Don't add ANY more water, it may seem like it needs it, but it doesn't! Squish the dough (you can touch it now, but not for to long) into a ball, and flatten into a 4-inch-wide disk. Wrap in plastic, and refrigerate at leats 30 minutes.

Remove dough disk from fridge. If stiff and very cold, let stand until dough is cool but malleable.

Using a floured rolling pin, roll dough disk on a lightly floured surface from the center out in each direction. Then you can put it in your pan.

I cook it at around 350* in the oven for a about 15 minutes, or untill it seems sort of hardish.

Makes 1(9-inch) pie crust.

I found these online, and changed them to work without sugar.

Right now we're attempting a pumpkin pie! The pumpkin's baking in the oven right now. We'll see how it turns out! :)
 
My nan is diabetic, so obviously she can't eat sugar. My mum adapts all sorts of recipes, for cakes, and loads of things, desserts, crumbles, custard, all sorts. I don't know any, but it's not hard to do, and there are LOADS of sites about, and loads of online recipes because I got a lot for my nan at one point.
