HI Sam,

I'm an Aussie and we do things a bit different here, but this is how I make a roast....

Get your rolled roast or chicken whatever it may be that you arecooking and place it on a rack and then pop it in the dish, I peel andchop my potatoes in half and put them straight into the dish after yourroast has been cooking for about 1/2hr.

I use oil(either canola or sunflower oil), not too much just enough tobaste over your beef and potatoes. I usually have the meat sitting in arack so all the juices drip into the tray and when you baste the beefas you cook, it has the juices of the beef going back over it.

I usually bake for about 2 -2 1/2 hrs depending on the size of meat youare cooking (ask your butcher roughly how long the piece you buy wiltake to cook) I normally cook on about 200 degrees celcius.

If this has confused you maybe you could do a google search on cooking a roast, that may help you :D

Goodluck and as for leeks I can't help you there sorry as my family don't eat them and I'd have notta clue about them.

Have fun!!

And gravy is always lovely and yummie to have made up to pour over the meat :D Mmmmmmm YUM

thanks aerial will give it ago - wish me luck xx anymore tips gratefully received though xx

Cook long and low :) I putthe roast beef in a large pan and fill 1/2 with water also put in apeeled onion and 4 beef bouillon cubes. Cover with foil (pokea hole in foil to let our steam). Cook at 325 degrees F (160C).

I generally cook a medium sized roast for approx. 4 hours -- or until very tender.

Depending on size of roast, cook for about 2 1/2 hours, then add peeledpotatoes and carrots. Add more water if necessary. Coveragain and continue to cook.

The liquid can be used to make gravy when the roast is done.
