My Birthday was on August 20th, but we had a special dinner for me on the 21st as my parents had a social function thing to go to. We did something really cool and I thought I would share:biggrin2:also known as bragging ;)

So I went to the store with a money limit of $100 (a rather ridiculous amount) to get a bunch of mystery ingrediants to use for dinner. The plan was to give my mom a box full of ingrediants and give her a certain amount of time to create a dinner. I thought it would be fun for everyone and that mom would enjoy doing something different (she absolutly loves to cook). So I went to the store and bought a bunch of stuff:

A Baguette, fresh basil, fresh mint, pack of boneless skinless chicken breasts, 6 peaches, a mango, a horned melon or Kiwano melon (as a curveball), Orange peach mango juice, fresh mozerella cheese, herbed goat cheese, gouda wheel, organic spinach, a cucumber, and a cauliflower.

The rules were that she could use anyting she already had in the house and that she was allowed to research recipies on the internet or use any cookbooks she had in the house. My mom cooked for around 3 and a half hours and this is what we got for dinner:

Spinach Salad with craisens, almonds and goat cheese crouton and a light balsamic vinigrette dressing.

Baked peach with crystalized ginger and toasted almonds topped with grenita (frozen juice that's been fluffed up)

The only thing my mom didn't use was the baguatte, which she said she wanted to leave for me to eat later (I loooove fresh bread, I ended up eating the whole thing by myself) She added: Almonds, craisens, pasta, curry paste, and coconut milk along with some other spices that she had around the house.

It was really really good! I wish she had ended up making more of it :)I just thought you guys might want to see it.

I wouldn't have thought of combining things like that, but it sounded so YUMMY!

How was your birthday? (Happy belated birthday, by the way!) Did you have a wonderful, special day? I hope so!

Oh, and fresh bread...I'm the same way...isn't it wonderful? My favorite so far is chibatta bread (is that you spell it?)...it has such a WONDERFUL flavor! :)

Last year, Mario had me invite my family and my co-workers and he paid the restaurant for all of us. He had beautiful flower centre pieces delivered to the restaurant too. I hadn't had a real birthday party in years and it was my first one with Mario. It was very special for me.

It's always fun when we have people that appreciate us show it. I really loved your dinner idea, so simple, yet so fun and original. I just love simplicity. :biggrin2:
