Lime Chicken Lettuce Wraps

3 tablespoons fresh lime juice
3 tablespoons vegetable oil, divided
2 tablespoons soy sauce, divided
3 teaspoons grated fresh ginger
1 clove garlic, minced
1 pound boneless skinless chicken breasts. Cut up and chopped into small pieces
1/2 red bell pepper, diced
2 green onions, diced
1 (5-ounce) can water chestnuts, drained and chopped
1 head iceberg lettuce, cored, cut in 1/2

In a medium bowl, combine lime juice, 2 tablespoons oil, 1 tablespoon soy sauce, ginger and garlic. Add chicken and let marinate in refrigerator for 30 minutes.
In a medium skillet, heat 1 tablespoon oil over medium-high heat. Add bell pepper, green onions, and water chestnuts; cook, stirring occasionally, for 3 minutes. Add chicken and marinade and cook 5 minutes, or until chicken is done. Stir in 1 tablespoon soy sauce.

Divide lettuce into leaves. Spoon about 1/4 cup mixture down center of 1 lettuce leaf. For an extra zing squeeze a little more fresh lime over the top. Fold bottom edge and sides up and over filling.
You can substitute the chicken for shrimp.

I went to a sandwich shop not so long ago and ordered a lettuce wrap. I'm horrible at making decisions, so when it was my turn to order I just blurted out the first thing that I read on the menu at that point.

I was very, very suprised to find no bread. The whole point for me to go into a place with so many breads to choose from is the bread. I can hardly eat a meal without bread of some sort.

However, I LOVED the wrap. I'm definantly going to try making this one, if our stores ever get produce in again. I'm not sure what the deal is (gas prices?) but three of the local places have been without the basics for about 3 weeks now.

You can make this same wrap using a traditional wrap.... a dill-spiced one works nice!:p

I was also very surprised when I first tried a lettuce wrap. And I loved it too!...seemed lighter and more"refreshing".

I like spicy tuna salad in a lettuce wrap, too!
