Both took a bite of the thick brown part, and seemed to like it.
It's also apparently edible for humans.
I couldn't find the plant in neither bun safe nor -harmful plants list.
But since they like it, and they generally haven't even tried anything "harmful"(most notably flowers like daffodil, and odd trees), is it okay to let them gnaw at it?

No idea. I know people can eat almost the whole plant. Apparently it's actually a type of grass, so I would imagine it's safe for rabbits, though can't say for sure. Doesn't that brown head part get fluffy when pulled apart? If it does, then that's something I would be cautious about. You just don't want separated fluffy bits getting inhaled.
