Help! Last minute xmas recipe needed!

I have been a silly billy and left it to the last minute LOL :embarrassed:

I'm cooking the dinner tomorrrow for 5 of us. We have roast beef and roast duck. Horseradish to go with the beef, but I need a sauce for the duck!! :shock:

I found an easy recipe for cranberry sauce with clementine juice but there are no cranberries to be had in the entire city. The fruit I have is blackberries, plums, apples....


What sauce can I make for the duck? Anyone got any ideas? I will love you forever! :D

In the meantime, I'm trawling the internet looking for something...:hugsquish:
 
Aah that sounds good! Sadly, the shops are shut now here and I don't have the apricot jam... :( Thanks though!

Which I'm thinking of trying. I was going to test it earlier but time got away from me, so now I think I'll just make it in the morning, and if it doesn't work then screw it we'll just have plain duck lol! :p

I'm also making bread sauce, yorkshire puddings and possible stuffing from scratch.... :?:shock::D
 
How about this one:

2 cans chicken consomme
6 tbsp. sherry wine
4 c. strong orange juice or
2 cans orange juice concentrate (3 oz. size) plus 4 cans water
4 tbsp. lemon juice
4 tbsp. current jelly
1 can mandarin oranges (optional)



Combine in saucepan consomme, wine, orange juice, lemon juice and jelly. Cook 10 minutes. Pour sauce over duck. Cover with foil. Roast 1 hour at 350 degrees, basting frequently. Uncover at end to brown. If desired, add 1 can mandarin oranges before serving.

Your dinner sounds wonderful - yum!!!!
