As it gets cold here anyone have any fall recipes? I love using fall produce and doing alot of baking and making more fall recipes. Here is my kids favorite.


STUFFED SQUASH


Your favorite kind of squash (butternut, acorn, turban, spaghetti)

chopped up ham

instant brown rice

raisins

pineapple, crushed with the juice

walnuts

carrots

brown sugar

butter





In a food processor mix the ham, pineapple, nuts and carrots. Add the pineapple juice and mix again. You want it to be a ground beef texture. Hand stir in the rice and raisins.Stir in the brown sugar more if you like sweet less if you only want a slight sweet. Stuff the squash with this mixture. Put squash in a deep dish pan surround with remaining stuffing. Dot squash with butter or butter substitue and cover pan with foil. Bake in a 375 oven until squash is tender. My kids love this. Sorry there are no measurements. I don't measure on this because this was come up with to use up leftovers. If you don't like meat you can use either turkey ham for those who will eat that or just up the rice and other ingredients and a bit more of your butter. My kids will actually eat a full squash on their own with this recipe.











 
We made this one last night.

FALL PIZZA

Premade pizza crust or use homemade if you have the time
Organic ranch dressing or garlic dressing
Spinach
Black olives
Green peppers
Red onions or vidalia if you can get them
Mushrooms
Fresh Garlic
Banana pepper rings (hubby likes this, but too spicy for me)
Blend of mozzarella and sharp cheddar and parmesan (can use the vegan versions)

Spray your pizza crust with a light coat of olive oil
Spread a thin layer of the dressing over the crust
Top with all of your veggies.

Top with cheeses, italian seasoning and bake until crust is done and cheese is melty let sit for 2 minutes, cut and enjoy.

For the cheese blend I take an 8oz block of mozz, an 8oz block of cheddar and 2 cups of parmesan. I shred it all with the food processor and then just gently mix it together with my hands and whatever is leftover we put in a ziploc and it lasts for 2 weeks.
 
That pizza recipe sounds YUMMY!

I make this... Sooo yummy and really easy to do!

Roast Butternut Squash and Carrot soup:

Ingredients:

1 Butternut Squash
6-8 carrots, depending on size, in 1/2 inch round slices
1 onion
6 cloves of garlic (sounds a lot but doesnt come out that garlicky)
2 sticks celery
fresh thyme
olive oil
salt and pepper
2-3 pints vegetable stock


Cut the squash into wedges/slices leaving the skin on, drizzle with olive oil, salt and pepper and bake in the oven for 45mins on mediumish heat. Halfway through the cooking time, add 3 of the cloves of garlic, still in the paper to the tray.

Meanwhile dice the onion, celery and crush remaning garlic cloves and fry gently in olive oil for about 10mins. Add the carrots, and handful of fresh thyme leaves. Add the vegetable stock and simmer for about 20-30mins, until the carrot is cooked enough to blend.

Remove the squash slices from oven and allow to cool slightly, Pull the skins away and ad the squash to the soup mixture. Squeeze the roasted garlic cloves into the pot as well.

Simmer for a few minutes, and then blend the whole lot- the squash should be roasted so that it is easily mashed up, making it easier to blend.

I sometimes add a splash of cream in at the end just before serving.

Yum! Now I want soup! :D
 
We do ALOT of soups in the winter. Kids like potato soup, tamale soup, chix noodle soup, homemade cream of mushroom soup oh and chix chili. But I'm trying to find some new recipes basically.
 
Oh and the pizza was awesome. I used the ranch dressing on mine and I did cheat and buy pre-made pizza crusts only because I wanted the night off. What we did is bought one 12" crust per person, they designed their own pizza, baked it and it gave me a night off. Plus we do our "Sunday dinner" on Saturday and use the leftovers for something on Sunday so mom gets a day off. Just a little hint for all of you with kids :)
