Chewing only soft materials

Sorry this one's a bit long!

Recently my rabbit Gnocchi (picture below she's a cutie) has started chewing my sheets and blanket (my bed is low to the ground and she is able to hop on). She used to lick them or slide them around but has now started chewing through them. Some days it seems to be worse than others and she kind of goes through phases. She doesn't chew on hard surfaces like furniture or her cage and she has toys she chews on for her teeth so I assumed this was due to boredom or stress. I can't think of anything recently that would have stressed her out except my roommates dog leaving a month ago (the dog would play with my rabbit but she always seemed annoyed at him so I didn't think she would miss him..I guess they were like siblings haha). As for boredom, I purchased more toys and given her more attention, but these don't seem to make a difference. I have also attempted to throw other sheets or blankets to see if it is the scent but she doesnt seem to care if theyre clean or used or from another room in the house, so i don't think it is the scent. She knows she is not supposed to be chewing my sheets since every time she does she looks up to see if i'm watching and if I start walking towards her she runs off... she's a sassy bun XD. I have been trying with reinforcement and redirecting her to toys every time she starts but she seems uninterested and sometimes frustrated with the toys. I have had rabbits my whole life but this behavior is a new one for me. If anyone has any advice on how to make her stop chewing the sheets, what is causing it, or keep her from getting bored that would be appreciated!

She is cute! I think you should try to see if she will chew if you are right there, if she doesn't, she respects you but she still wants to, if she does she doesn't care... I don't really know what else to try because you have already done that but good luck!
 
I would put an old sheet on your bed that she can chew, or you could put a taste deterrent on your blankets, but then you might not want to use then.
Is she spayed? It might be spring hormones?
