I miss having easy access to good burritos. Los Angeles is full of good authentic and not-so-authentic Mexican food. Upstate NY, not so much.

My favorite is a Chipotle burrito with...
Flour Tortilla
Carnitas
Rice
Pinto Beans
Lettuce
Cheese
Guacamole

I nearly lived off of black bean and egg burritos in college. I modified a huevos rancheros recipe. Open a can of black beans and rinse really well. Mash half, put all beans in a small skillet some salsa. When heated, crack an egg or two on top and either fry it or scramble it with everything else. I prefer scrambled. Eat rolled up in a tortilla with cheese or other toppings.

I love Qdoba's burritos. I wish there was one in the area!

Gives me migraines
Is it the MSG? Real taco seasoning (what you don't buy in the store, you have to mix herbs and spices) might be fine for you.

We eat this in burritos once a week for dinner....we love it so much! It is quick to make if you have everything on hand - we always have these in the fridge/pantry.

Heat up these in a microwaveable bowl: refried beans or refried black beans, a can of corn, salsa to taste (it really flavors everything!), and a small can of diced jalapenos.
Add in 1 package of cooked spanish rice.
Wrap in a burrito with mexican cheese.
Then heat it up on a griddle to make the shell kind of crispy or in the microwave real quick (just to melt the cheese some more).

Drain the water from the corn ?

Brandy....of course, lol! Watery burritos wouldn't be too yummy :p.

Beth....I hope you like it! Ryan and I just threw it together one day and have been eating it since, lol. It also makes a super good bean dip!
