I want to start clicker training my 5 month old bunny. I bought a clicker and a book. Has anyone else tried this with their rabbits before? What are your thoughts on this?

He probably is not neutered and his adult hormones are kicking in. Neutering ( getting him fixed) will help a lot. I think you can get them fixed after they are 6 months old at least.

When my rabbit chews on the bars of his cage I cover that area with a blanket. He stops chewing on it if he can't see me. Then I uncover it again when he stops.

I saw that you mentioned making a snuffle mat. I made my rabbit a snuffle mat. You can use a sink mat from dollar tree. And the fleece baby blankets from dollar tree and cut them into strips. It is very good for enrichment. Here is how to do it if you are interested:
